      To make Tongcu Liji, you need:

      250g pork tenderloin, 2 tablespoons cooking wine, 2 teaspoons honey, 1 tablespoon white sugar, 1 teaspoon salt, 1 tablespoon light soy sauce, 2 tablespoons dark soy sauce, 1 tablespoon rice vinegar, 1/2 teaspoon cornstarch, 1 teaspoon sesame oil, 2 tablespoons vegetable oil, some green onion, garlic, ginger and pepper.

      Method:

      1. Marinate the pork with cooking wine and salt for 10 minutes;

      2. Heat vegetable oil in a wok. Add the pork and stir-fry until both sides are golden. Remove from the heat;

      3. In a separate bowl, mix the honey, sugar, light soy sauce, dark soy sauce, rice vinegar, cornstarch, sesame oil and pepper. Stir to combine;

      4. Heat the wok again, add the marinated pork, followed by the sauce and green onion, garlic, and ginger. Simmer until the sauce thickens;

      5. Dish it up, garnish with sesame seeds, and serve.

      二、年糕

      Niangao or Glutinous Rice Cake is another popular dish during Spring Festival. This traditional food symbolizes a good start to the New Year. It’s also believed that eating this sticky cake implies a wish for a better future and closer ties with family and friends.

      Ingredients needed:

      500g glutinous rice flour, 120g brown sugar, two tablespoons of lard, some lye water, some maltose powder, some roasted sesame seeds.

      Method:

      1. Make the dough by mixing the glutinous rice flour, brown sugar and lard in a bowl. Gradually add lye water and knead until a smooth consistency;

      2. Pinch off a small portion of dough and roll into a big ball. Then, flatten the ball with hands to form a round shape. Put some maltose powder into the shape;

      3. Place the shaped cakes on a greased baking sheet lined with baking paper. Sprinkle some roasted sesame seeds over the top;

      4. Preheat the oven to 180°C. Bake the cakes for 20-25 minutes until they are golden-brown;

      5. Allow the cakes to cool before serving.
